Wrap the puff pastry around the wheel of brie putting the edges on the bottom to completely enclose the brie cheese. Use the scraps of dough to cut out letters, shapes or anything else you'd like to use to decorate your Brie En Croute (From this point you can cover your Brie En Croute and put it in the refrigerator if you like).
Beat one egg with 1 tablespoon of water to make an egg wash. Use the egg wash as a glue to attach the letters or shapes. (From this point you can cover your Brie En Croute and put it in the refrigerator if you like). Make sure to refrigerate your egg wash if you're making the pastry ahead of time.
Brush the tops and sides of the brie en croute with your egg wash.
Bake until golden brown for about 20 minutes (around 40 minutes if frozen). Let cool for 5 minutes and serve.
